Description: Edible mushroom. Mushroom from eastern Asia which is now cultivated, with great success, in other parts of the world. It is cultivated on the wood of leafy trees, preferably oak, beech or birch, approximately two months after cutting. It is prized for its healing effects, especially in illnesses of the air passages, blood circulation and the liver. Shiitake have a natural antibacterial effect when it comes to the treatment of ulcers and indigestion. Their effect is that of a “sponge” that helps to rid the body of toxic substances, including absorbing radiation. According to some studies, these mushrooms have an anti-tumour effect, and also reduce cholesterol levels and high blood pressure, as well as joint pain.

Use: This mushroom is known for its specific aroma and naturally spicy taste. Shiitake mushrooms are widely used in eastern Asia, both fresh and dried. In Japan, this mushroom is frequently served in miso soup, or in a variety of boiled, fried or steamed dishes. It is a source of many essential minerals, but low in energy. It can effectively replace meat in one’s diet. It can be added to soups or sauces, or prepared as a “steak”, fried, grilled, steamed or smoked. Recommendation: Before use, soak in water for 1 hour.
