Description: The eponymous North American tree can be as much as 25 to 40 metres tall and its seeds are hidden in hard brown shells. In fact the name given to them by the Native Americans roughly means: “a stone is needed to crack it”. However, as biologists point out, it is not really a nut but a stone fruit, kind of like an apricot. Pecans are sweeter than the similarly shaped walnuts which whom they share nutritional values. Pecans are known to improve memory and focus.

Pecans are 65–75 % fat; they also contain calcium, potassium, magnesium, zinc and copper. They are an important source of energy and have positive effects on hair and nails.

Use: These nuts can be eaten as a snack or added to muesli and other mixes, or used as ingredients in baking. Furthermore, thanks to their fat content you can make a pecan spread or cheese. They are particularly tasty in a variety of nut-based desserts.

Sweet pastries with pecans and maple syrup are irresistible.

You can try them at home, e.g. as puff pastry. All you need to do is to spread the dough, cut it in identical squares, spread maple syrup on them, add the nuts and then form pods of sorts. Finally, apply a thin layer of egg yolk and put the pods in the oven to bake.
